Easter Reminded Me of the Miracles That Are My Children

Greetings from Pittsburgh, Pennsylvania! Things have been busy. I am still a working mom of three, working full time who is trying to make a difference. I do a lot of things and try to be present so that I can learn from them. I share them on this blog so that we can learn together. Below are some thoughts, hacks, and/or lessons that I have learned from navigating my world. Below is a tale of my road to becoming the mother of three. It was a road filled with joys and disappointments. However, I wouldn't giving nothing for my journey now. Here's to embracing every step of the journey, even the painful ones, and embracing the lessons learned along the way.

A Peek Into the Life of a Working Mom: Almost Wordless Wednesday (Dinner)

I have enjoyed cooking ever since I was a kid. So, it's not surprise that I often cook for my family. Cooking is therapeutic for me. However, it is also a way to express my love for my family and control what they eat. In addition, cooking is cheaper than going out to eat or getting take out. However, we  do that too. 

Working moms need a formula for making healthy meals


I won't lie, it can be challenging to find the time to cook. So, you have to be creative. Recognize that hunger is the gift that keeps on giving. We know that we need to eat every day, no matter how much we think we are becoming like machines. So, you need your go to meals that you can make without taking up too much time.

 My formula is to identify a protein, vegetable, and a starch. If I am making the meal from start to finish, my goal is to have the meal done in thirty minutes, including preparation time.

 These are photos of a meal I threw together on Sunday--pan seared tilapia, green beans, and sauteed mushrooms. It met my requirements and was tasty. In the interest of full disclosure though, the only thing the kids ate were the noodles! This was the first time I tried the shirataki noodles. I enjoyed them.
