A Secret to Success This New Year: Become Committed and Resilient

Mom and son celebrating the new year in the Bahamas in 2025! "Our greatest glory is not in never falling, but in rising every time we fall." – Confucius Greetings from Pittsburgh, Pennsylvania ! Things have been busy. I am still a working mom of three , working full time who is trying to make a difference. I do a lot of things and try to be present so that I can learn from them. I share them on this blog so that we can learn together. Below are some thoughts, hacks, and/or lessons that I have learned from navigating my world. 2025 was intense. I faced a convergence of pressures: the stress of navigating life as a single mom while paying considerable  alimony ,  an intensifying family situation since we lost my beloved aunt, my dad, and my cousin’s mom—work related stress—learning a new job after an imposed job change, all while navigating the rapid pace of raising my kids and trying to maintain a standard of living for them with fewer resources. What I Like For Breakfast

Eggs over easy
A typical Saturday breakfast

Every once and a while I'm asked personal questions from readers. One is, "what do you like for breakfast?" I'm not exactly sure why people ask that question. However, it may be that breakfast is the great equalizer.
There are all of these variables that come up with lunch and dinner like time, menu and expense. However, breakfast is something that most people like simple and quick. It's not called "break fast" for nothing. In the morning we are HUNGRY so it is all about getting something we like in our bellies so that we can start our days.

Eggs Over Easy Make Me Happy

My breakfast choices have evolved over the years. I used to be a cereal kind of gal. However, I found that I was hungrier sooner than I'd like after eating cereal. I don't remember where my current breakfast choice originated. However, my favorite breakfast at the moment is "Two eggs over easy, turkey sausage or turkey bacon and toast". Most weekdays, I have only one egg and no meat. However, on the weekends or on vacation, when I have time to enjoy it, I'll have what's pictured below. I might even throw in some coffee on vacation.

Eggs over easy

For some unknown reason, I find myself drawn to coffee when I'm at a diner. At home, I drink tea. (One bag of Earl Grey and One bag of Green Tea to be exact). Sometimes I add some red onions and avocado. Sometimes the toast has butter and honey. Other times it just has butter. Occasionally, the toast has butter and jam. The one constant though are the eggs. Whether one or two they have to be over easy. If they are too hard I don't want them.  They must have salt and pepper and there must be toast.

The top photo shows a weekend breakfast when I try to change it up! It's got a crab scramble and avocado. I also tried to style the photo because I am a blogger! ;-)

Breakfast is so personal though. What's your favorite?!
