One Secret to a Working Mom Success: Minimize Expenses

Following Instagram posts can make you feel like other moms are either made of money or have sugar daddies funding their lifestyles. I can assure you. I have neither. There is nobody funneling money into my household except for me. And because I was an economics major and my dad was a banker, I am keenly aware of cash flow, assets and liabilities, and expenditures. Still, sometimes, I forget how expensive life can be. It's not because I lied about having a sugar daddy or have a trust fund.  It is because I am frugal. Indeed, being conscious of expenditures is integrated into my lifestyle.  I know that it is gauche to discuss money and yet, I feel compelled to share some thoughts.

Working Mom Tip: Making Dinner Fast and Nutritious

What working moms value as much as their paychecks is their time. Time is power. It lets you clean your house, do your work and play with your kids. The challenge when you work full time is finding the time to do everything that you want well.  My grandfather always said that the secret to saving money was figuring out how to save on your essentials. His rationale? You need to eat, drink water and have shelter. So, find the most economical ways to do those things and then you'll be able to have some money for a few luxuries!

I think that the best way for a working mom to find more time in her schedule is to find a way to reduce the time it takes to do the essentials. We have to work, clean our homes, and feed our families. So, if we find a way to do those things more efficiently, we may just be able to find more time to play with our kids and get our nails done!

A Fast, High Protein, High Fiber Delicacy

Here's a recipe for a quick nutritious meal that has no name.

Chicken, beans, couscous, and spinach

1.       2lbs Chicken Breast

2.       Two Cans Black Beans

3.       2 Boxes Couscous

4.       1 Bag of Frozen Spinach

5.       2 packets Goya Sazon seasoning

6.       1 large onion

7.       1 large Bell Pepper

8.       Minced garlic

9.       Ken's Light Caesar Dressing

10.   Olive Oil

Directions:

Cooking time between 20-30 minutes.

Thaw your chicken. When you go to work, put it in a bowl and cover it with Ken's Light Caesar Dressing and sprinkle in one packet of the Goya Sazon seasoning. (It makes everything taste good!)

When you get home, change your clothes, pour yourself a glass of wine and sautéing your chicken. Cook until it's well done and put it to the side. Slice your onion and pepper. Then sauté your pepper with your onion and add your beans and garlic. Separately sauté your spinach with a little garlic and olive oil.

Cook your couscous according to the directions. It takes 5 minutes, which makes it preferable to rice for busy moms.

Serve!
