Happy Summer!!!

Dog Days of Summer have begun Most working moms are exhausted this time of year. The kids are over school. The uniforms have holes in them and the book bags are held together with duct tape. And then, just like that, Memorial Day comes to help us cope with what we have to do. It gives us a reprieve to prepare for the summer--a less structured life filled with longer nights and more fun.

Wordless Wednesday: A Dessert for those who lack time

Memorial Day Dessert
Working moms are long on ambition, but short on time. That means that even though our hearts may be crying out to make a homemade peach cobbler to take to the Memorial Day picnic, the clock tells us that we just can't do it. In those situations, we need a back up plan.

When I needed to bring a dessert to the cookout I attended on Monday, I was inspired by somethng I saw on the old Bethenny Frankel show. Say what you want about Bethenny, she knows how to prepare food quickly that is rich in taste, but on calories. I made ice cream sandwiches out of Chips Ahoy Cookies and Breyer's Vanilla Ice Cream. They were the perfect treat for a hot day and enjoyed by adults and kids alike.
