Easter Reminded Me of the Miracles That Are My Children

Greetings from Pittsburgh, Pennsylvania! Things have been busy. I am still a working mom of three, working full time who is trying to make a difference. I do a lot of things and try to be present so that I can learn from them. I share them on this blog so that we can learn together. Below are some thoughts, hacks, and/or lessons that I have learned from navigating my world. Below is a tale of my road to becoming the mother of three. It was a road filled with joys and disappointments. However, I wouldn't giving nothing for my journey now. Here's to embracing every step of the journey, even the painful ones, and embracing the lessons learned along the way.

A Delicious Black Bean Soup With Lime Shrimp for Dinner

Certain questions constantly plague working moms: 1) Should we even make the effort to fold laundry ever? 2) Is there a cosmic conspiracy to keep us running ragged?  and 3) What's for dinner? I can't answer the first two questions. However, I have answer to the last one and my answer is delicious and appropriate since it's Black History Month!


How Misty Copeland Answered the Ultimate Question: What's for Dinner?


In some ways, my daughter is an aspiring ballerina. In others, she is a little girl who is going through the motions because her mother is making her. What we can all agree on is that she has been taking ballet for three years ad currently attends ballet classes twice a week. 

As motivation for this ballet pursuit, I have tried to provide her with inspiration from other dancers. We have attended the Nutcracker for two out of the past three years. And last fall, for her birthday, we went to hear Misty Copeland speak. Misty was amazing! She showed up all strong and beautiful and she shared her story of trial and triumph with the crowd. After her talk, I became an even bigger fan. We bought two of her books, which she autographed and afterwards, like I do with everyone I admire, I became a bit of an internet stalker researcher of her life. 

My internet research led me to a recipe for "Black Bean Soup With Lime Shrimp" that Misty made on "The Chew". I printed it some time ago, but just got a chance to make it. It was fast, easy and delicious! The link below contains the cooking directions. For your convenience, I've included the ingredients below. Don't worry if you don't have a of the ingredients. I was inspired by the recipe, but I wasn't faithful to it. I added scallops. I also switched out some ingredients based on what I had in my pantry. I replaced heavy cream with half and half, vegetable broth with chicken broth and I didn't use fire roasted tomatoes. It was still super yummy though!

Misty's Black Bean With Lime Shrimp Recipe



Ingredients:

BLACK BEAN SOUP:
  • 2 tablespoons olive oil
  • 1 large onion (chopped)
  • 3 cloves garlic (peeled, chopped)
  • 1 teaspoon ground cumin
  • 2 tablespoons chili powder
  • 2 14- ounce cans black beans (rinsed, drained)
  • 1 14- ounce cans fire-roasted tomatoes (diced)
  • 1/2 cup heavy cream
  • 5 cups low-sodium vegetable broth
  • hot sauce
  • Kosher salt and freshly ground black pepper (to taste)
LIME SHRIMP:
  • 1 clove garlic (peeled, chopped)
  • 3 tablespoons olive oil
  • 2 limes (zested and juiced)
  • 1/2 teaspoon crushed red pepper
  • 1/4 cup parsley (chopped)
  • pinch Kosher salt
  • 16 jumbo shrimp, peeled, deveined, and butterflied
